From premium Italian cured meats and cheeses sliced tableside on iconic Berkel machines to signature cocktails and a refined speakeasy-inspired atmosphere, every detail has been designed to create an unforgettable guest experience.We are looking for a highly driven and entrepreneurial General Manager to join our opening leadership team and lead one of Milan’s most exciting new hospitality destinations.What you’ll do:As General Manager, you will not simply oversee operations, you will shape the identity, culture, and commercial success of Dal Salumiere.You will be responsible for the overall management of the venue, ensuring operational excellence, financial performance, exceptional guest experiences, and a strong people culture from pre-opening through long-term growth.This is a hands-on leadership role for someone who thrives in premium hospitality environments and knows how to combine operational precision with creativity, energy, and commercial vision.Your responsibilities will include: - Leading the successful opening and launch of the venue, setting operational standards and service culture - Full responsibility for day-to-day business performance across restaurant, bar, guest experience, and events - Driving profitability through strong P&L management, budgeting, forecasting, labour control, and cost optimization - Recruiting, developing, and inspiring high-performing teams across all departments - Creating a culture of excellence, accountability, hospitality, and attention to detail - Ensuring exceptional guest experiences and maintaining the highest service standards - Overseeing VIP relations, reservations strategy, and private events execution - Collaborating with ownership on business strategy, positioning, partnerships, and long-term growth opportunities - Supporting marketing, brand visibility, and guest engagement initiatives to position Dal Salumiere as a leading hospitality destination in Milan - Ensuring full compliance with HACCP, health & safety, and operational proceduresWho you are:We are seeking a charismatic and commercially minded hospitality leader with a strong entrepreneurial mindset and a passion for premium guest experiences.The ideal candidate has: - Minimum 3+ years of experience in a General Manager, Operations Manager, or Senior F&B leadership role within luxury hospitality, lifestyle restaurants, members clubs, premium nightlife, or high-end entertainment venues - Proven experience in opening projects and/or scaling hospitality businesses - Strong financial acumen with deep understanding of P&L management, budgeting, forecasting, and cost control - Exceptional leadership skills with the ability to motivate, coach, and retain top talent - A deep understanding of guest experience and luxury hospitality standards - Strong commercial mindset with experience driving revenue growth and profitability - Excellent organizational, communication, and problem-solving skills - Fluent in English and Italian (additional languages are a plus) - Knowledge of premium dining, cocktails, wine culture, and nightlife environments is highly appreciated - Flexibility to work evenings, weekends, and in a dynamic opening environmentWhat we offer: - The opportunity to lead a landmark hospitality opening in Milan - A key leadership role with real impact on the growth and identity of the brand - A dynamic, ambitious, and entrepreneurial work environment - Career development opportunities within a growing hospitality project - Competitive compensation package and performance-based incentivesAt Dal Salumiere, hospitality is theatre, tradition becomes experience, and excellence is built through people.If you are ready to lead an ambitious opening project and shape the future of a new destination in Milan, we would love to hear from you.📩 Apply via LinkedIn or send your CV to: apply@dalsalumiere.com
