We are looking for a Junior Sous Chef Pastry to join our pastry brigade in a Luxury 5-Star Hotel , supporting the Head Pastry Chef and Executive Chef in the daily operations of the department.
This is a key leadership role within the pastry kitchen, combining hands-on production, team supervision, and operational excellence, while ensuring consistency, quality, and creativity across all pastry offerings.
Key Responsibilities
Pastry Operations & Quality
- Support daily pastry operations and ensure full readiness for service
- Ensure consistency in preparation, plating, and presentation of all pastry items
- Oversee mise en place, hygiene, and organization of pastry workstations
- Ensure full compliance with standard recipes, portioning, and HACCP procedures
Service & Guest Experience
Ensure all pastry products meet 5-star quality, presentation, and timing standardsSupport smooth service during events, tastings, and high-volume operationsPromote a guest-focused and service-driven culture within the pastry teamFinancial & Sustainability
Support portion control, waste reduction, and proper inventory rotationMaintain food cost awareness and support stocktaking activitiesPromote sustainable practices, seasonal ingredients, and efficient product usageLeadership & Team Development
Supervise and mentor Chef de Partie Pastry, Demi Chef de Partie, Commis, and ApprenticesSupport onboarding, training, and ongoing professional development of junior pastry staffFoster a positive, inclusive, and collaborative pastry kitchen cultureCreativity & Collaboration
Contribute creative input to pastry menus and seasonal offeringsSupport tastings, promotions, and new dessert rolloutsCollaborate closely with the Sous Chef Pastry and Executive ChefCandidate Profile
Proven experience in pastry kitchens within quality hotels or restaurants; luxury hospitality experience is a strong plusSolid technical pastry skills with strong attention to detail and presentationNatural leadership abilities with the capacity to guide and motivate a teamAbility to perform under pressure while maintaining consistency and precisionA professional aligned with values of care, integrity, respect, inclusion, and continuous improvement
